jerky marinate (for 2-4 Lb. very lean meat)

used this on venison. Seemed a little moist

Ingredients

  • 1/2 cup soy sauce
  • 1/4 cup Worcestershire sauce (or half and
  • half with Balsamic vinegar)
  • 1/2 tsp. liquid smoke
  • 1 tsp. hot pepper sauce
  • 1/4 tsp. cayenne pepper
  • 1 tsp. dry Italian dressing mix
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1/2 tsp. coarse black pepper
  • 1/2 cup brown sugar
  • 2/4 tsp. coriander seed

Directions

  1. Combine all and marinate meat (cut in 1/4 inch strips on the bias) overnight in tightly closed container, in refrigerator.
  2. then proceed with jerking process.
