Basic Beef jerky / or Sweet and Sour jerk

Ingredients

  • Basic Recipe
  • 4 Tbsp. soy sauce
  • 4 Tbsp. Worcestershire sauce
  • 1 Tbsp. tomato sauce or ketchup
  • 1/4 tsp. coarse black pepper
  • 2 cloves garlic (crushed)
  • 1/2 tsp. salt
  • 1 Tbsp. grated gingerroot
  • Sweet and Sour jerk
  • 1 tsp. salt 1/4 tsp. pepper
  • 1/2 tsp. onion powder
  • 1 garlic clove (crushed)
  • 3 Tbsp. brown sugar
  • 1 Tbsp. soy sauce
  • 1/4 cup red wine vinegar
  • 1/4 cup pineapple juice

Directions

  1. Using either set of marinade ingredients. In a small bowl, combine all ingredients. Mix well.
  2. Cut meat into strips about 1/4 inch thick on the bias. Place meat three or four layers deep in a container, spooning marinade over each layer. Cover tightly. Marinate in the refrigerator 6 to 12 hours, stirring occasionally.
  3. Shake off excess marinade, and place in dehydrator in a single layer, not touching, and process 12 hours, or until meat bends but doesn’t break.
