Jerky Marinate

an adaptation of several recipes trying to make it my own.

Ingredients

  • 1/2 cup soy sauce
  • 1/4 cup Worcestershire sauce
  • 1/2 tsp. liquid smoke
  • 1 tsp. hot pepper sauce
  • 1 tsp. lemon juice
  • 1/4 tsp. allspice
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1/2 tsp. coarse black pepper
  • 1/2 cup brown sugar
  • 1 tsp. lime juice
  • 1 Tbsp. curry powder

Directions

  1. Combine all in a bowl. In a glass dish, ladle some marinate to cover the bottom of the dish. Layer meat in one layer, top with marinate, make another layer of meat, cover with marinate, continue until all used.
  2. Cover dish tightly and let marinate in refrigerator overnight.
  3. Shake excess marinate off and place meat on trays of dehydrator in single layers. Process 8 to 9 hours until desired consistency.
