Veggie Nuggets

Ingredients

  • 2 large russet potatoes, in 2-inch cubes
  • 2 medium carrots, peeled and cut into 1-inch pieces.
  • 1 cup broccoli florets
  • 1/2 cup frozen corn kernels, defrosted
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion pwder
  • 1/4 cup all-purpose flour
  • 2 large eggs, whisked
  • 1 cup bred crumbs
  • cooking spray

Directions

  1. Steam potatoes and carrots separately for 15 minutes.

  2. Add the broccoli to the carrots and steam 5 minutes more.

  3. Mash the potatoes; finely chop the corn, broccoli and carrots.

  4. Add the veggies, salt, garlic powder, onion powder to the mashed ptoatoes.

  5. read the mixture 1/2 inch think on a baking sheet and freeze for 1 hour (no more than 1.5 hours).

  6. Place the flour egg and bread crumbs in three separet bowls forming an assembly line.

  7. Prehat the broiler and line a baking sheet with foil. Coat the foil with cooking spray.

  8. Remove the pan from the freezer. Use a cookie cutter to ut shapes.

  9. Gently coat the nuggets with the flour, then the egg and bread crumbs and place on the baking sheet.

  10. Freeze at this point, if desired (freeze on baking sheet for 30 minutes then transfer to Ziploc bag.)

  11. Lightly coat the nuggets with cooking spray.

  12. Broil for 2 minutes on each side or until golden or bake at 450 for 10 minutes.
