Ginger Plum Pork Medallions

Ingredients

  • 1 pound pork tenderloin or 4 4 ounce pork medallions
  • 1 Jalapeno pepper, seeded and finely chopped, divided
  • 2 tablespoons honey
  • 1 tablespoon peeled and grated ginger root
  • 1 1/2 teaspoons sesame oil
  • 2 fresh plums, pitted and diced
  • 1 small green onion, finely sliced
  • 2 tablespoons prepared plum sauce

Directions

  1. Preheat grill to medium (300 to 350 degrees).

  2. If using whole tenderloin, cut diagonally into 1/2 to 3/4 inch slices to form medallions.

  3. Reserve 1/2 teaspoon of the chopped jalapeno for salsa.

  4. Blend remaining jalapeno, honey, ginger and oil in small bowl.

  5. Spread evenly on both sides of medallions.

  6. Cover and refrigerate 5 minutes.

  7. For salsa, combine plums, green onion, plum sauce, reserved 1/2 teaspoon jalapeno, and salt to taste in small bowl.

  8. Toss to mix.

  9. Cover and set aside.

  10. Place pork medallions on grill.

  11. Grill, covered 6 to 8 minutes or until pork is no longer pink in center turning once.

  12. Serve with plum salsa
