Guacamole

Ingredients

  • 2 ripe avocados
  • 1/2 white onion, minced (about 1/2 cup)
  • 1/2 minced jalapeno pepper, seeds and stems removed
  • 2 Tbsp. chopped cilantro
  • 1 Tbsp. freshly squeezed lime juice
  • 1/2 tsp. coarse salt
  • Freshly ground black pepper
  • 1 medium tomato, diced and seeds removed

Directions

  1. mash avocado with a fork, leaving some texture. Add remaining ingredients. Mix lightly and pile into a bowl.
  2. Per serving: 62 cal., 5g fat, o cholesterol, 1g protein, 4g carbs. , 3g fiber, 150mg sodium.
