Bacon-Cheese Quick Bread

Ingredients

  • Cooking spray
  • 6 slices bacon, chopped
  • 1 1/4 cup all-purpose flour
  • 3/4 cup cornmeal
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. coarse salt
  • 1/2 tsp. cayenne
  • 3/4 cup milk
  • 1/2 cup condensed Cheddar Cheese soup, undiluted
  • 2 Tbsp. canola oil
  • 1 large egg
  • 2 green onions, finely chopped
  • 3/4 cup shredded cheddar cheese

Directions

  1. Preheat oven to 350 degrees. Spray a 9 x5
  2. inch loaf pan with cooking spray.

  3. In a medium skillet over medium heat, cook bacon until crisp, stirring occasionally, drain on paper towels.
  4. Whisk together flour, cornmeal, baking powder, baking soda, salt and cayenne in a large bowl.
  5. Whisk together milk, soup, oil and egg. Add soup mixture to flour mixture; stir until just incorporated. Fold in green onions, cheese and bacon. Scrape into prepared pan.
  6. Bake about 40 minutes, or until a wooden pick inserted near center comes out clean. Let cool on a wire rack 15 minutes; remove from pan.
  7. Per serving: 120 calories, 6g fat, 20mg. cholesterol, 5g protein, 13g carbs., 1g fiber. 420mg. sodium.
