Jumbo Chocolate Chip Cookies

Ingredients

  • 1 cup butter or margarine softened
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 2/3 cups flaked coconut
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup milk chocolate chips (I use a total of 1 1/2 cups any chips I have in house)
  • 5 ounces white candy coating, chopped, optional (I don’t do this part)

Directions

  1. In large mixing bowl, cream butter and sugars.

  2. Add eggs beating after each one, beat in vanilla.

  3. Combine flour, baking soda, baking powder and salt.

  4. Add to the creamed mixture.

  5. Stir in coconut and chips.

  6. Shape 3 tablespoons of dough into ball and place 3 inches apart on ungreased cookie sheets.

  7. Bake at 350 for 12-18 minutes or until lightly browned.

  8. Cool.

  9. (If dipping, melt white candy coating in microwave and dip one end of cookie in coating. Place on waxed paper to set.)

  10. Makes 2 dozen large cookies.
