Brown Sugar Pecan Liqueur

Ingredients

  • 1/2 Lb. shelled pecans
  • 1/2 (750ml.) bottle dark rum
  • Finely grated zest of 1 orange
  • 1 1/4 cups Brown Simple Syrup

Directions

  1. heat a heavy skillet, preferably cast iron, over high heat for 5 minutes. Remove from heat. Add pecans and stir until nuts are aromatic and lightly toasted, about 2 minutes. Transfer nuts to a rimmed baking sheet and let cool until just warm to the touch, about 10 minutes.
  2. In a food processor, chop nuts until their texture resembles coarse sand.
  3. In a 2 quart jar or container, combine the rum, chopped pecans and orange zest. Stir to moisten. Seal. Place jar in a cool, dark place for 7 to 10 days, or until it smells and tastes strongly of pecans. Strain without pressing on solids into a clean jar or bottle. Discard solids. Add the Brown Simple Syrup and mix well. Seal. Will keep in a cool, dark place for up to 1 year.
