Four-Cheese Mashed Potato Casserole

Ingredients

  • 5 pounds white potatoes, peeled and cut into 1 inch pieces
  • 3 oz reduced fat cream cheese, softened
  • 1/4 cup crumbled blue cheese
  • 1 cup reduced fat Cheddar cheese, shredded
  • 1/4 cup Parmesan cheese, shredded
  • 8 oz reduced fat sour cream
  • 1 teaspoon garlic salt
  • Milk
  • 1/4 teaspoon paprika
  • 1 teaspoon fresh chives, chopped

Directions

  1. Place potatoes in a sauce pan. Add enough water to cover potatoes. Heat to boiling over high heat; reduce heat to medium. Cook uncovered for 5-18 minutes or until tender; drain. Mash potatoes with master or electric mixer on low speed.

  2. In large bowl, beat cream cheese, blue cheese, Cheddar cheese, and Parmesan cheese with electric mixer on low speed until smooth. Beat in sour cream and garlic salt.

  3. Heat oven to 350 degrees. Stir cheese mixture into potatoes until well blended. If potatoes are too stiff, stir in milk, 1 tablespoon at a time, until desired consistency. Spoon into ungreased 13×9 inch glass baking dish.

  4. Bake uncovered 35-40 minutes or until hot and top is lightly browned. Sprinkle with paprika and chives.
