Watermelon, Honeydew and Cantaloupe Granitas

Ingredients

  • 1/4 cup granulated sugar
  • 1/4 cup water
  • 1/4 tsp. kosher salt
  • 1/2 cup fresh basil, mint or tarragon
  • 2 Lb. watermelon, honeydew or cantaloupe, cut into 1-inch pieces (about 5 cups), plus more for serving.

Directions

  1. In a small saucepan, combine the sugar, 1/4 cup water for honeydew and cantaloupe) and salt and bring to a boil. Reduce heat and simmer (do not stir) until the sugar dissolves, 2 to 3 minutes.
  2. Remove from heat, add the herbs and let cool completely, then strain into a small bowl.
  3. In a blender, puree the cooled syrup and 5 cups melon until smooth. Strain into a metal loaf pan or square pan, cover and freeze until set, about 3 hours.
  4. When ready to serve, using a fork, scrape the surface of the melon ice to create large flakes. Transfer to glasses and sere with additional fruit, if desired.
