Welsh rarebit with leeks

Ingredients

  • 1 tbsp unsalted butter
  • 2 thin leeks, washed and finely sliced, or 8 spring onions
  • 4 thick slices sourdough bread
  • 150g mature Cheddar, grated
  • 1 tbsp Worcestershire sauce, plus extra to serve
  • 1 egg yolk
  • 1 tbsp English mustard
  • pinch of cayenne pepper
  • 2-3 tbsp beer

Directions

  1. Melt the butter in a non-stick pan over a medium heat and cook the leeks for 5 minutes. Set aside.

  2. Preheat the grill to medium and lightly grill the bread on both sides.

  3. Mix the cheese, Worcestershire sauce, yolk, mustard and cayenne, and mash well. Stir in the leeks and 2 tablespoons beer until you have a paste. Add extra beer if it is too thick.

  4. Spread over the toast and grill for 2-3 minutes, until melted and hot. Drizzle with a little Worcestershire sauce and serve with a green salad.
