Vegetable Khichdi

Ingredients

  • 1 cup cauliflower
  • 1/4 cup potatoes
  • 1/4 cup peas
  • 1 cup rice
  • 2 1/2 cup water
  • 2 tsp ghee
  • pinch of asofaetida (hing)
  • 1/2 tsp cumin seeds (jeera)
  • 1/2 tsp turmeric powder (haldi)
  • 1/2 tsp chili powder
  • salt

Directions

  1. Rinse rice in water 3 times and let it soak

  2. Cut cauliflower in small florets

  3. Peel and cube potatoes

  4. Put the pressure cooker on the stove, on medium heat, and add ghee

  5. After the ghee has melted and is hot, add hing, jeera, haldi and mirch

  6. Add all vegetables to the mix, stir it thoroughly and let it cook for 3-4 minutes

  7. Drain the water from the rice and add rice to the cooker

  8. Mix thoroughly, then add water and salt

  9. Close the cooker and turn up the heat to high.

  10. Turn off the heat after 2 whistles
