No-cook white chocolate fudge

Ingredients

  • 200g white chocolate, broken up
  • 175g unsalted butter, at room temperature
  • 50g condensed milk
  • 500g icing sugar, sifted
  • 50g plain or milk chocolate, chopped

Directions

  1. Carefully melt the white chocolate in a bowl set over a pan of just-simmering water. Stir until smooth. Set aside to cool slightly.

  2. Beat the butter in a large bowl, then stir in the chocolate and condensed milk. Gradually beat in the icing sugar, until you have a smooth, non-sticky dough. Press into a non-stick baking tin, about 25 × 15 × 4cm deep. Freeze for 15 minutes to firm up.

  3. Run a knife around the edge of the fudge and turn out onto a chopping board. Cut evenly into 48 squares.

  4. Melt the plain chocolate as before. Spoon into a piping bag fitted with a small plain nozzle, and decorate the fudge. Allow to set.
