Chicken and Cauliflower Poppers

Ingredients

  • 1 head Cauliflower (Cut into Florets)
  • 3 Scallions (Sliced)
  • 3 tablespoons Parsley (Roughly Chopped)
  • 1 clove Garlic
  • 2 teaspoons Soy Sauce
  • 1 pound Ground Chicken
  • Salt and Freshly Ground Black Pepper
  • Vegetable Oil (For Frying)
  • Marinara Sauce (For Dipping)

Directions

  1. In a food processor, combine cauliflower, scallions, parsley, garlic and soy sauce and puree until a chunky paste forms.

  2. Add in the ground chicken, salt and pepper and pulse until the mixture has evenly combined.

  3. Heat a tablespoon of vegetable oil in a medium sauté pan over medium high heat. Using a small cookie scoop or rounded tablespoon, scoop the meatballs into the pan being sure not to crowd the pan.

  4. Cook on each side for 4-5 minutes.

  5. Serve with marinara sauce or your favorite dip.
