Thai Pork Stir-Fry

Serves 4 people

Ingredients

  • 4 cloves garlic, chopped
  • 1 small onion, sliced
  • 2 carrots
  • 1 small sweet red pepper, julienned
  • 1 Tbsp. oil
  • 1 lb. thinly sliced boneless pork chops
  • 1 (14.5 oz.) can chicken broth
  • 1/3 cup bottled fish sauce
  • 3 Tbsp. chopped peanuts
  • 3 Tbsp. brown sugar
  • 4 oz. rice noodles, broken in half
  • 1 Tbsp. cornstarch
  • 1/4 cup water

Directions

  1. Sauté garlic, red onion, carrots and sweet red pepper in oil in non-stick skillet over high heat 5 minutes.
  2. Add thinly sliced boneless pork chops; cook 3 minutes.
  3. Add chicken broth, fish sauce, peanuts and brown sugar.
  4. Add rice noodles, broken in half (submerge in liquid); cover; cook over low heat 6 minutes. Stir in cornstarch mixed in water; cook until thickened.
