Instant Soup

Ingredients

  • 1tsp. freshly grated ginger
  • 2 tsp. red miso ( look for it near the tofu or
  • at specialty stores)
  • 2 oz. firm tofu, cut down to small neat cubes
  • 1 big handful fresh baby spinach leaves
  • 1 green onion, sliced into long, thin slivers
  • 1/2 tsp. toasted sesame oil
  • 1 cup chicken broth
  • Soy sauce, to taste

Directions

  1. In a large soup bowl, pile up in order; ginger, miso, tofu, spinach and green onion. Drizzle with sesame oil. Douse with broth.
  2. Place bowl in microwave and zap until hot, 2 minutes. Stir
  3. If you like, drizzle on a little soy sauce.
  4. Adjust proportions to create more then one serving if desired.
