Tomato, Sausage and Cheddar Bread Pudding

Ingredients

  • 3 cups (12 oz.) shredded sharp cheddar
  • cheese
  • 1 can (28 oz.) diced tomatoes, drained
  • 1 lb. bulk Italian sausage, cooked and
  • crumbled
  • 4 green onions, thinly sliced
  • 1/4 cup minced fresh basil or 1 Tbsp. dried
  • 1/4 cup packed brown sugar
  • 1 tsp. dried oregano
  • 1 tsp. garlic powder
  • 3 cups cubed French bread
  • 6 eggs
  • 1 1/2 cups heavy whipping cream
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 cup grated Parmesan cheese

Directions

  1. In a large bowl, combine the first eight ingredients. Stir in bread. Transfer to a greased 13×9-inch baking dish.

  2. In the same bowl, whisk eggs, cream, salt and pepper; pour over bread mixture. Sprinkle with Parmesan. Bake at 350 degrees for 45-50 minutes or until a knife inserted near the center comes out clean.
