Quick Vegetable Pulao

Serves 3 people

Ingredients

  • 1 cup rice
  • 1 tbs pav bhaji masala
  • 1 tbs oil
  • 2 cup water
  • 1/4 cup onion
  • salt
  • 1 cup assorted vegetables of your choice, cut in small pieces
  • (frozen or fresh, eg. corn, peas, beans, carrots, mushrooms, bell pepper etc)

Directions

  1. Wash rice thoroughly

  2. Add 2 cups water to rice and cook it in the cooker with no whistle, until steam is released, about 7-10 mins.

  3. Spread the rice into a wide bottom container to cool down

  4. Chop onion into fine pieces

  5. Put a pan on the stove and then add oil

  6. When the oil is hot, add onions and cook until translucent

  7. Add all the vegetables and salt

  8. Cook covered for 7-10 mins until all vegetables are cooked. Mix pav bhaji masala into it.

  9. Turn off the heat, then add the cooked vegetables to the cool rice.

  10. Mix thoroughly.

  11. You can add roasted nuts, raisins, ghee, if you like, for extra taste
