Veal Loaf

Serves 6 people

Ingredients

  • 2 1/2 lb. veal, knuckle or shin
  • 1/4 lb. salt pork
  • 2 tsp. salt
  • 1 tsp. chopped onion
  • 1 cup cracker crumbs
  • 1 cup water or stock
  • 1 egg
  • 1/2 tsp. sage
  • 2 Tbsp. butter
  • 1 sm. mushroom caps.

Directions

  1. Chop veal and pork very fine and add salt, onion, crumbs, 1/2 cup water, the egg and sage. Mix well together.
  2. Pack into greased pan and cook in moderate oven (350 degrees) 2 1/2 hours, basting occasionally with remainder of water combined with butter. Garnish top of loaf with broiled or sautéed mushroom caps.
