Skillet Baked Beans

I prefer Showboat pork and beans, but you can use what you like.

Serves 4 people

Ingredients

  • 2 cans pork and beans
  • 4-6 slices bacon
  • 1 small onion , finely chopped
  • 2-3 Tbsp. prepared mustard
  • 1/4 to 1/2 cup brown sugar

Directions

  1. In a large skillet, cook bacon until crisp. Remove and drain on paper towels.
  2. In the same skillet sauté onion in the bacon drippings, or discard drippings and use butter to sauté.
  3. Add the beans with their juices to the skillet. Reduce heat to low. Add brown sugar and mustard and stir well until well blended.
  4. Crumble bacon, and add to bean mixture.
  5. Continue cooking until reduced, and juices thicken.

  6. If you are cooking something else in the oven, when it is done, turn the oven off, and place the pan of beans in the oven while it cools, to finish thickening.
