Maple Cran-Apple Breakfast Pizza

Ingredients

  • 2 Tbsp. cornmeal
  • 1 tube (13.8 oz.) refrigerated pizza crust
  • 5 Tbsp. maple syrup, divided
  • 1 1/2 tsp. olive oil
  • 3 eggs, lightly beaten
  • 1 medium tart apple, thinly sliced
  • 1 Tbsp. lemon juice
  • 1 cup (4 oz.) shredded cheddar cheese
  • 3 fully cooked apple chicken sausage links,
  • thinly sliced (about 9 oz.)
  • 1/2 cup dried cranberries

Directions

  1. Preheat oven to 400 degrees. Grease a 15×10×1-inch baking pan; sprinkle with cornmeal. Gently unroll and press pizza dough onto the bottom and 1/2 inch up sides to the prepared baking pan. Brush dough with 2 Tbsp. maple syrup. Bake for 8-10 minutes or until edges are lightly browned.

  2. In a small nonstick skillet, heat oil over medium heat. Pour in eggs; cook and stir until eggs are thickened and no liquid egg remains. Spoon eggs onto crust.

  3. In a small bowl, toss apple slices with lemon juice. Top pizza with apple, cheese, sausage and cranberries. Bake 5-7 minutes longer or until cheese is melted. Drizzle with remaining syrup.
