Brown Sugar & Bourbon Salmon

Ingredients

  • 1 skinless salmon fillet (2 to 3 lb.)
  • 1/2 cup bourbon
  • 1/4 cup packed light brown sugar
  • 2 Tbsp. soy sauce
  • 3 cloves garlic, minced
  • 1/2 cup chopped scallions, green parts only
  • 2 tsp. dark sesame oil
  • Cooked rice

Directions

  1. Place a rack in center of the oven; preheat to 425 degrees.

  2. Place salmon fillet in a 9×13 inch glass baking dish. Pour bourbon in a small bowl, add brown sugar, and stir until brown sugar dissolves. Add soy sauce, garlic, scallions, and sesame oil and stir to combine. Pour bourbon marinade over salmon. Pick up salmon with a fork to let some of the marinade run under it.

  3. Bake salmon until it is well cooked and crisp around edges but still a little soft in center, about 15 minutes. Remove baking dish from oven and let salmon rest for about 15 minutes. Sere with rice.
