Holiday Roasted Pork Tenderloin with Three ariations

Ingredients

  • 2 (lb.) pork tenderloins
  • Olive oil
  • Kosher salt and ground black pepper
  • 2 cups apple cider
  • 1 cup fresh cranberries
  • Salt and ground black pepper
  • Vegetable oil
  • 2 to 4 slices prosciutto, cut in pieces

Directions

  1. Heat oven to 400 degrees.
  2. Brush or rub olive oil over the surface of each pork tenderloin. Sprinkle each on all sides with salt and pepper. Place the tenderloins in a small roasting pan and roast 30 minutes or until the center of the tenderloins reaches 145 degrees.

  3. Meanwhile, in a small saucepan over medium-high, combine the cider with the cranberries. Bring to a simmer and cook, uncovered, until thickened and reduced to 1 cup. Season lightly with salt and pepper.
  4. Coat a medium skillet with thin film of oil and heat over medium-high heat, add several slices of prosciutto and cook until crisp. When the pork tenderloin is cooked, serve covered with the glaze and garnish with shard of crisped prosciutto .
  5. Slice and serve topped with glaze.
