Pork Roast with Herb Rub

Ingredients

  • 2 Tbsp. sugar
  • 2 tsp. dried marjoram
  • 2 tsp. rubbed sage
  • 1 tsp. salt
  • 1/2 tsp. celery seed
  • 1/2 tsp. ground mustard
  • 1/8 tsp. pepper
  • 1 boneless pork loin roast (4 lb.)

Directions

  1. In a bowl, mix sugar, marjoram, sage, salt, celery seed, ground mustard and pepper; rub over roast. Refrigerate for at least 4 hours.

  2. Preheat oven to 350 degrees. Place roast on a rack in a shallow roasting pan, fat side up. Roast 1 1/4 to 1 3/4 hours or until a thermometer reads 145 degrees.

  3. Remove the roast from oven and tent with foil. Let stand 15 minutes before slicing.
