Pecan-Crusted Fish Sticks

Ingredients

  • 3/4 lb cod fillets, rinsed and patted dry
  • 1 cup pecan halves
  • 1 cup torn whole-wheat bread pieces
  • 1/2 tsp salt
  • 1/2 cup all-purpose flour
  • 2 eggs, lightly beaten

Directions

  1. oven to 450. Coat a wire baking rack with non-stick spray and place on a baking sheet; set aside.

  2. Cut fish into strips and set aside.

  3. Place pecans, bread and salt in a food processor; pulse until fine.

  4. Place in small bowl.

  5. Put flour and eggs in separate bowls.

  6. Lightly coat cod in flour. Dip in egg and roll in pecan mixture.

  7. Put fish on rack, coat with cooking spray.

  8. Bake 10-12 minutes or until golden.
