Farotto with Peas and Parmesan

Ingredients

  • 1 tbsp olive oil
  • 1/3 cup chopped onion
  • 1 cup farro (spelt)
  • 4 cups chicken broth, warmed in saucepan
  • 1 tbsp unsalted butter
  • 1 cup finely shredded Parmesan
  • 1 cup frozen peas

Directions

  1. Put the oil in a large saucepan over medium heat.

  2. Add the onion, cook and stir for 5 minutes or until tender.

  3. Add the farro and cook and stir for 2 minutes or until toasted.

  4. Add broth to the farro, about 1/2 cup at a time.

  5. Cook and stir after each addition until liquid is absorbed.

  6. Continue adding broth, stirring frequently until farro is tender but not mushy (about 40 minutes)

  7. Stir in the butter, Parmesan and peas.

  8. Cook and stir to heat through; serve immediately.
