Spicy Mini-Cheese Balls

Ingredients

  • 1 (8 oz.) pkg. Neufchatel or cream cheese,
  • softened
  • 1 cup grated sharp cheddar cheese
  • 1/4 tsp. garlic powder
  • 1 Tbsp. chopped fresh parsley
  • 1/4 tsp. smoked paprika
  • 1/4 tsp. ground ancho chile pepper
  • 1/2 tsp. ground red pepper (cayenne)
  • 1/2 cup finely minced fresh chives
  • 1 Tbsp. poppy seeds
  • 2 Tbsp. sesame seeds
  • 1/2 tsp. coarse salt
  • 1/2 tsp. coarsely cracked black pepper

Directions

  1. Combine the cheeses, garlic powder, parsley, paprika, chile pepper and red pepper in a food processor and pulse to thoroughly combine. Scrape mixture into bowl, cover, and refrigerate 1 hour.
  2. Spread chives, in a plate; set aside.
  3. In a small bowl, stir together the poppy seeds, sesame seeds, salt and pepper. Spread seed mixture on a small plate.
  4. Divide and shape cheese mixture into 35 to 40 small balls. Roll the remaining balls in the seed mixture. Sere the balls with crackers
  5. 40 bite-size appitizers.
