Sponge Cake with Orange Icing

Ingredients

  • 1 1/4 c cake flour
  • 1 c sugar
  • 1/2 t baking powder
  • 1/2 t salt
  • 6 eggs separated
  • 1 t cream of tartar
  • 1/2 c sugar
  • 1/4 c cold water
  • 1 t vanilla
  • Icing
  • Butter-size of one large egg
  • 1 box powdered sugar
  • 1 orange, juice and rind

Directions

  1. Sift together first 4 ingredients. Set aside.
  2. Beat egg whites, sugar, and cream of tartar together until stiff.
  3. Beat egg yolks, water, vanilla with dry ingredients for one minute. Fold in egg whites.
  4. Pour into 9 or 10 inch cake pan.
  5. Bake at 350F for 40-50 minutes.
  6. Combine butter, powdered sugar, orange juice and rind of orange. Stir until smooth.
  7. Cool cake completely before icing.
