Gluten Free Chocolate Brownie

Just the best brownie recipe – even better than some using regular flour.
Can be made dairy free, using dairy free spread.
Serve warmed as a dessert, or cold with a cuppa or a coffee.
To get true brownie texture, remove from oven while it is still a little soft in centre.

Ingredients

  • 110 g butter or dairy free spread
  • 3/4 C soft brown sugar
  • 1/2 C caster sugar
  • 1 1/2 t vanilla essence
  • 3 eggs
  • 3/4 C gluten free flour
  • 1/2 C gluten free cocoa powder
  • 1/2 t gluten free baking powder
  • 1/2 C walnuts or pecans, chopped (optional)
  • Gluten free icing sugar or chocolate icing to serve (optional)

Directions

  1. Melt butter, mix in sugar and vanilla.

  2. Beat in eggs, singly.

  3. Add sifted flour, cocoa and baking powder, mix thoroughly.

  4. Stir in chopped nuts if using.

  5. Pour into paper-lined 20cm square baking pan and bake at 160oC approx 25 minutes, or until just cooked.

  6. Cool for 5 mins in tin before turning onto wire rack to finish cooling.

  7. Dust with icing sugar, or ice with chocolate icing to serve.
