Peppermint creams

Ingredients

  • 1 medium egg white
  • 300g ( 10 1/2 oz.) white icing sugar
  • 2-3 drops peppermint essence
  • 2-3 drops green food colouring
  • 100g (3 1/2 oz.) dark or milk chocolate

Directions

  1. Line a baking sheet with parchment paper.

  2. In a large bowl, whisk the egg white until frothy but not stiff. Sift over the sugar and add the peppermint essence. Stir to combine into a stiff mixture.

  3. de between 2 bowls and mix the green colouring into 1. Roll teaspoonfuls of the mixture into 20 smooth balls to give you 10 white and 10 green balls. Place on the baking sheet anf flatten each with a fork. Leave in a cool place for 24 hours to set.

  4. Melt the chocolate in a bowl over a pan of simmering water. Cool slightly. Dip 1 half of some of the peppermint creams into the melted chocolate and transfer to a wire rack to set.
