Chunky Chicken Cacciatore

Ingredients

  • 6 boneless skinless chicken thighs
  • 1 jar (24 oz.) garden-style spaghetti sauce
  • 2 medium zucchini, cut into 1 inch slices
  • 1 medium green pepper, in 1 inch pieces
  • 1 large sweet onion, coarsely chopped
  • 1/2 tsp. dried oregano
  • Hot cooked spaghetti
  • Sliced ripe olives and shredded Parmesan
  • cheese, optional

Directions

  1. Place the first six ingredients in a plastic freezer bag; seal and freeze.

  2. To use, place filled freezer bag in refrigerator 48 hours or until completely thawed. Transfer contents to 3 quart slow cooker. Cook, covered, on low 4-5 hours or until tender. Coarsely shred chicken.

  3. Serve with spaghetti. If desired, sprinkle with olives and cheese.
