St. Patrick’s Scones

Ingredients

  • 2 cups sifted flour
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1 Tbsp. sugar
  • 1/2 cup shortening
  • 2 eggs
  • 1/2 cup evaporated milk
  • 3/4 cup seedless raisins
  • 1/2 cup thick strawberry jam

Directions

  1. Chop raisins coarsely.
  2. Resift flour with baking powder, salt and sugar.
  3. Cut in shortening. Add beaten eggs, evaporated milk and raisins. Mix to moderately soft dough.
  4. Turn out on floured surface, then divide in half. Roll or pat each piece into a 7 1/2 inch circle. Carefully fit one piece into a buttered 8-inch round cake pan, pressing dough about 1/4-inch up the sides of the pan. Spread with jam. Cover with remaining dough. Cut through dough with sharp knife dividing it into 6 wedges. Bake 424 degrees for 20 to 25 minutes. Serve hot.
