Chicken Almandine

Ingredients

  • 1/4 cup diced green pepper
  • 1/2 lb. sliced mushrooms
  • 4 Tbsp. margarine
  • 1/3 cup flour
  • 1/8 tsp. nutmeg
  • 1 tsp. salt
  • dash of black pepper
  • 2 cups chicken broth
  • 1 cup light cream
  • 2 cups diced, cooked chicken
  • 1/4 cup diced pimiento
  • 1/2 cup sliced almonds, toasted

Directions

  1. Sauté diced green pepper and sliced mushrooms in margarine. Blend in flour until smooth. Gradually add chicken broth and cream, until slightly thickened. Add nutmeg, slightly thickened. Add nutmeg, salt , pepper, pimiento and chicken. Simmer for about 7 minutes. Put in serving bowl and top with sliced almonds.
