Ginger Rolls

Ingredients

  • 2 pkg. yeast
  • 1/4 cup water, lukewarm
  • 1 cup milk
  • 1/4 cup shortening
  • 1/2 cup sugar
  • 2 tsp. salt
  • 1 tsp. cinnamon
  • 5 cups sifted flour
  • 2 eggs, beaten
  • 2 cups raisins or currents
  • 1/4 cup finely chopped crystallized ginger
  • Confectioners' sugar icing
  • chopped nuts

Directions

  1. Soften yeast in water.
  2. Scald milk. Add shortening, sugar, salt and cinnamon. Cool to lukewarm. Add 1 cup flour. Mix well.
  3. Add eggs and softened yeast. Beat well. Add raisins or currents and ginger. Add enough flour to make a soft dough.
  4. Turn out on lightly floured surface and knead until smooth.
  5. Place in greased bowl. Cover and let rise until doubled, (about 1 1/2 hours). punch down. Let rest 10 minutes. Shape into small rolls of desired shape.
  6. Bake at 400 degrees 12 to 15 minutes. When cook, brush with confectioners’ sugar icing and sprinkle with nuts.
  7. makes about 4 1/2 dozen rolls
