Ingredients

  • 2 cups milk
  • 2 tsp. baking powder
  • 2 eggs, lightly beaten
  • 1/3 cup sugar
  • 1 tsp. vanilla
  • dash of salt
  • 1/2 stick butter
  • 1 1/2 cups flour
  • 1/2 cup mini chocolate chips, optional
  • Fruit sauce:
  • 1 pint raspberries, fresh or frozen
  • 1 pint strawberries, fresh or frozen
  • dash of salt
  • 1 Tbsp. honey

Directions

  1. Melt the butter in a large bowl, add milk, baking powder, eggs, sugar, vanilla and a dash salt, mixing well with wire whisk.
  2. Add flour to make desired consistency; whisking just until flour is incorporated.
  3. For a fun presentation, pour the pancake mixture into a plastic squeeze bottle and then squeeze the batter in your skillet in the shape of a heart (do the outline first, wait a couple minutes, then do the inside of the heart), cooking until pancakes are lightly browned. Serve with fruit sauce for pancakes below and sprinkle a few mini chocolate chips on top, if desired.
  4. Fruit sauce

  5. Add fruit to a pan and cook on low to medium heat until tender. Mash some of the fruit with a fork. Add salt and honey and mix well, cooking 1-2 minutes longer. Serve hot over pancakes, or will keep in refrigerator for two days.
