Feta Chicken and Pasta

Serves 4 people

Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups cooked Farfalle (bowtie) pasta
  • 1 bundle fresh spinach, washed with stems
  • removed
  • 1 tsp. olive oil
  • 1 tsp. garlic, minced
  • 1/2 cup chicken broth or stock
  • 4 oz. feta cheese
  • 4 oz. light cream cheese, cut in small pieces
  • salt and pepper to taste

Directions

  1. Heat olive oil in a large skillet or sauté pan. Add garlic, cooking for 2 minutes on medium low heat.
  2. Add spinach to pan, cook until wilted. Add chicken, pasta and broth and continue cooking.
  3. When all ingredients are warm, stir in the feta and cream cheese, mixing until melted, add salt and pepper to taste. If needed, thin with additional chicken broth or milk.
