Chicken Fajita Submarine Sandwiches

Ingredients

  • 1 Tbsp. chili powder
  • 1 1/2 tsp. ground cumin
  • 1/2 tsp. ground oregano
  • 1/4 tsp. salt
  • 1/4 tsp. garlic powder
  • Dash cayenne pepper
  • 1 Tbsp. canola oil
  • 1 lb. boneless skinless chicken breasts, cut
  • into 3/4-inch cubes
  • 1 medium sweet red pepper, cut into strips
  • 1 medium onion, halved and sliced
  • 1/2 cup water
  • 1 loaf (1 lb.) French bread, halved lengthwise
  • 1/3 cup mayonnaise
  • 6 slices pepper jack cheese

Directions

  1. In a bowl, mix the first six ingredients.

  2. In a skillet, heat oil over medium heat. Add chicken, pepper and onion; cook and stir 10-12 minutes or until no longer pink and vegetables are tender.

  3. Stir in water and seasoning mixture; cook and stir until thickened, about 10 minutes.

  4. Spread mayonnaise over cut sides of bread. Cut crosswise into six pieces.
