Cowboy Beans and Rice with Franks

Ingredients

  • 1 tsp. canola oil
  • 1/2 med. onion, chopped
  • 1/2 med. green bell pepper, chopped
  • 4 hot dogs, sliced
  • 3 cups cooked rice
  • 2 (15 oz.) cans pinto beans, rinsed
  • 3/4 cup barbecue sauce

Directions

  1. Heat oil in large skillet over medium heat until hot. Add onion and bell pepper; cook and stir 3-4 minutes until softened.
  2. Add hot dogs (sliced into 1/4 inch rounds), 3 cups cooked rice, canned, rinsed beans and barbecue sauce; mix well.
  3. Reduce heat to low-simmer 6-7 minutes until hot.
