Potaffle

Ingredients

  • 4 cups cold leftover mashed potatoes
  • 1/4 cup all-purpose flour
  • 2 Tbsp. each chopped green onions and red
  • bell peppers
  • 1/2 cup grated cheddar or parmesan cheese
  • 1 egg, lightly beaten

Directions

  1. Coat waffle iron with cooking spray. Preheat according to manufacturer’s directions. Combine potatoes and remaining ingredients. Mix well. Spoon 1/4 cup mixture onto center of waffle iron and cook until golden brown. Repeat with remaining mixture.
