Smashed Potatoes

Ingredients

  • 2 lbs. thin-skinned potatoes
  • (red skin or Yukon Gold), cubed
  • 4 Tbsp. butter
  • 1 cup whole milk
  • 1/2 tsp. salt

Directions

  1. In a large saucepan, cover potatoes with water. Cook until tender, about 20 minutes. Drain.
  2. Heat butter and milk in pan. Return potatoes to hot milk mixture and stir until smashed and mixed well. Stir in salt.
