Chicken Wild Rice Soup

Ingredients

  • 8 tbsp butter
  • 1 small onion minced
  • 4 celery, cut in half lengthwise, finely chopped
  • 2/3 cup flour
  • 9 cups chicken broth
  • 2 cups cooked wild rice
  • 4 carrots, cut in half lengthwise, finely chopped
  • 2 cooked chicken breasts, chopped
  • 1/4 cup chopped slivered almonds
  • 1/2 cup half-and-half

Directions

  1. Rinse 1 cup wild rice, mix with 3 cup water and add salt. Cover and bring to boil then reduce temp to rolling boil and keep covered for 45 min. Drain any extra liquid.

  2. Sauté onion and celery in butter until tender.

  3. Blend in flour and gradually add broth.

  4. Cook, stirring constantly, until mixture comes to a boil.

  5. Reduce heat and simmer 30 min.

  6. Stir in rice, carrots, chicken, almonds simmer about 5 minutes.

  7. Blend in half and half and serve.
