Zucchini-Lemon Pasta

Ingredients

  • 2 tsp. olive oil
  • 3 oz. Canadian bacon, julienned (1/2 cup)
  • 1 1/2 lbs. zucchini, sliced thin
  • 1/2 tsp. salt
  • 1/2 tsp. freshly ground pepper
  • 2 tsp. minced garlic
  • 1/4 tsp. grated lemon peel
  • 1 lb. spaghetti, cooked (reserve 1/4 cup cooking water)
  • 1 Tbsp. fresh lemon juice
  • 1/2 cup julienned basil

Directions

  1. Heat oil in a large skillet over high heat.
  2. Add bacon and cook, stirring, 2 minutes.
  3. Add zucchini, salt and pepper; cook, stirring, just until tender-crisp, 5 minutes.
  4. Stir in garlic; cook 1 minute.
  5. Toss with lemon peel, hot spaghetti, reserved water, lemon juice and basil.
