Fluffy Pumpkin Pancakes

Ingredients

  • 2/3 cup all-purpose flour
  • 2/3 cup whole wheat flour
  • 1/4 cup sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. pumpkin pie spice
  • 1/4 tsp. ground cinnamon
  • 1/8 tsp. salt
  • 2 eggs
  • 1 cup fat-free milk
  • 2/3 cup vanilla yogurt
  • 2/3 cup canned pumpkin
  • 2 Tbsp. canola oil
  • 1/4 tsp. vanilla extract
  • Maple syrup

Directions

  1. In a large bowl, whisk the first eight ingredients. In another bowl, whisk eggs, milk, yogurt, pumpkin, oil and vanilla until blended. Add pumpkin mixture to dry ingredients; stir just until moistened.
  2. lightly coat a griddle with cooking spray; heat over medium heat. pour batter by 1/2 cupful onto griddle. Cook until bubbled on top begin to pop and bottoms are golden brown. Turn; cook until second side is golden. Serve with syrup.
