Valentine Cupcakes

Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1/2 tsp. vanilla extract
  • 2 eggs
  • 1 1/2 cups unsifted cake flour
  • 1 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1/3 cup milk
  • 1 box (6.5oz.) white fluffy frosting mix
  • 1/4 tsp. almond extract
  • Red Food Coloring
  • 2 Tbsp. chopped maraschino cherries

Directions

  1. Cream butter, gradually add sugar and beat until light and fluffy. Add vanilla, then eggs one at a time, beating well after each.
  2. Mix next 3 ingredients and add alternately with milk to creamed mixture, beating after each addition until smooth.
  3. Half-fill 16 greased cupcake sections with batter. Bake in preheated 375 degree oven about 20 minutes.
  4. Cool slightly, then remove to racks to cool completely.
  5. prepare frosting as directed on label, adding almond extract. Tint a delicate pink with a few drops coloring. Fold in chopped cherries and spread on cakes.
