Patricia’s Chocolate Pie

Ingredients

  • 1 cup granulated sugar
  • 1/4 cup plus 2 Tbsp. all-purpose flour
  • 1/4 cup plus 2 Tbsp. cocoa
  • 1/4 tsp. salt
  • 2 cups milk
  • 3 eggs, separated
  • 1 Tbsp. butter
  • 1 1/2 tsp. vanilla extract, divided use
  • 1 homemade or refrigerated 9-inch pie crust, baked
  • 1/4 tsp. cream of tartar

Directions

  1. In a large saucepan, combine sugar, flour, coca and salt; gradually stir in milk, cooking and stirring over medium heat until mixture boils and thickens. Cook 2 minutes more. Remove from heat.
  2. Beat egg yolks slightly in a medium bowl. Stir small amount of hot mixture into the egg yolks, then stir all of the egg yolk mixture into the hot milk mixture.
  3. Return to heat and cook 2 minutes more, stirring constantly. Remove from heat, stir in butter and 1 tsp. of the vanilla. press a sheet of plastic film from forming. let cool to room temperature. Pour into prepared pie crust.
  4. For the meringue: Beat the egg whites with 1/4 tsp. whites with 1/4 tsp. cream of tartar and 1/2 tsp. vanilla extract to soft peaks. Gradually add 6 tablespoons of sugar, beating until stiff peaks form and sugar is dissolved. Spread or mound meringue over pie, sealing edges at crust.
  5. Bake at 350 degrees for 12 minutes or until meringue is golden.
