Spiced Bourbon peach-Apple Pie

Ingredients

  • 1 box Pillsbury pie crust
  • 1/3 cup butter
  • 5 Granny Smith apples; cored, peeled, sliced thin
  • 2 (16 oz.) pkg. frozen peaches
  • 1/4 cup bourbon
  • 2/3 cup sugar
  • 1 Tbsp. apple pie spice
  • 1/3 cup flour
  • 1 egg
  • 1/3 cup caramel sauce (optional)

Directions

  1. preheat oven to 350 degrees. Unroll one pie crust and put in pie pan. Melt butter in large skillet over med-high heat. Add apples and cook until softened, 8-10 minutes. Add peaches, bourbon, sugar and apple pie spice. Sprinkle with flour and stir together well as mixture heats and thickens. Pour mixture into crust in pan. Place second crust over filling. Trim to fit, saving scrapes for decorating. Slice small opening in top of crust; press edges together. Wisk an egg in a small bowl, then brush to coat top of pie.
  2. Roll our crust scrapes, and cut shapes to decorate. Brushing pieces with egg.
  3. Bake in preheated oven 40-45 minutes, until crust is golden brown. Cool completely.
  4. Serve with caramel, whipped topping and a dusting of apple pie spice.
