Lemon Bars

Ingredients

  • 2 cups PLUS 1 Tbsp. all-purpose flour, divided use
  • 1/2 cup confectioners' sugar, plus more for garnish
  • 1 cup butter, cut into small pieces
  • 1 (14 oz.) can sweetened condensed milk
  • 4 eggs
  • 2/3 cup lemon juice
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 4 drops yellow food color
  • 1 Tbsp. grated lemon zest, plus more for garnish
  • Fresh raspberries, for garnish

Directions

  1. heat oven to 350 degrees.
  2. Combine 2 cups of the flour and the 1/2 cup confectioners’ sugar in a bowl. Ct in the butter with a pastry blender until mixture is crumbly. Press lightly onto bottom and halfway up sides of ungreased 13 × 9 inch baking pan. Bake 20 minutes.
  3. In a separate bowl, beat the sweetened condensed milk and eggs until combined. Beat in lemon juice, 1 Tbsp. flour, baking powder, salt and food coloring just until blended. Fold in the 1 Tbsp. lemon zest; pour over crust.
  4. Bake 20 to 25 minutes or until filling is set and crust is golden brown. Cool in pan on wire rack. Refrigerate for 2 hours. Cut into bars, sprinkle with confectioners’ sugar. Garnish with raspberries and lemon zest.
