Healthy Truffle Bites

Yummy and healthy as well.
Vary with addition of dried fruits, crystallised ginger or roll in coconut.
Soften dates with a tablespoon of water in microwave to make processing easier and balls a bit more moist.

Ingredients

  • 1/2 C dates
  • 1/2 C cashew nuts
  • 1/4 C almonds
  • 1 - 2 T nut butter (cashew, nutella,peanut)
  • 1-2 t ground ginger (optional)
  • 1/4 C crystallised ginger, cranberries, raisins (optional)

Directions

  1. Soften dates, as above comment, and then process all ingredients in food processor until mixture clumps together.

  2. Nicer if nuts are coarsely chopped.

  3. Roll teaspoon lots into balls and set in frig.
