Taco Soup

Ingredients

  • 2 lbs. lean ground beef
  • 1 medium yellow onion, chopped
  • 2 15 oz. cans stewed tomatoes
  • 1 10 oz. can Rotel tomatoes
  • 1 14oz. can pinto beans
  • 1 14 oz. can ranch style beans
  • 1 14 oz. can corn kernels
  • 2 cups chicken or vegetable broth
  • 1 cup water

Directions

  1. Brown beef in large soup pot with salt, pepper, chopped onion and garlic powder.
  2. Drain.
  3. Put all the other ingredients in the pot with cooked beef and cook for 1 hour.
  4. Optional garnishes- grated cheese and/ or crumbled tortilla chips
